Cauliflower Tortillas

These delicious cauliflower tortillas are a healthy, low-carbohydrate alternative to traditional flour tortillas. Made with just cauliflower rice, egg, Parmesan cheese, and a touch of salt, they are simple to prepare, naturally high in protein, and packed with flavor. They’re perfect for tacos, wraps, quesadillas, or even as a crispy base for cauliflower pizza. A great way to add more vegetables to your meals without sacrificing taste!

Ingredients

  • 2 cups cooked frozen cauliflower rice, very well squeezed to remove excess water

  • 1 large egg, beaten

  • ¾ cup grated Parmesan cheese

  • Pinch of salt

  • Cooking spray

Instructions

  1. Preheat the oven to 350°F.

  2. Microwave the frozen cauliflower rice for about 6 minutes, or until fully cooked.

  3. Allow it to cool slightly, then place the cauliflower rice in a clean kitchen towel or cheesecloth and squeeze out as much water as possible.

  4. In a bowl, combine the cauliflower rice, beaten egg, Parmesan cheese, and salt. Mix well.

  5. Line a baking sheet with parchment paper and lightly spray with cooking spray.

  6. Scoop approximately ½ cup of the mixture onto the baking sheet. Flatten and shape it into a very thin tortilla, about 5–6 inches in diameter.

  7. Bake for approximately 20 minutes, or until the edges are golden brown and the tortilla is firm enough to flip.

  8. Carefully flip each tortilla and bake for another 5–10 minutes, until the other side is golden brown.

  9. Allow to cool for a few minutes before using.

Serving ideas: Use these tortillas for tacos, wraps, quesadillas, or even as a base for cauliflower pizza. They're especially delicious when filled with grilled chicken or turkey, avocado, vegetables, and your favorite low-sugar salsa.
